Recipe of the day: Salmon Quinoa Salad
Quinoa has a lot of aminoacids and it`s cooked similar to rice.Quinoa is a grain grown in crops that has edible seeds and it is not a true cereal.
How to cook Quinoa
use hot water, soak for five minutes and remove its outer coating because it will have a bitter taste if not removed
stir the quinoa with your hand, and carefully pour off the rinsing water, using a fine mesh or something
transfer the quinoa to the cooking pot, add 1 1/2 cups water and 1/2 tsp salt if desired
bring to a boil and turn the heat down to let it simmer
cook the quinoa for 15 minutes
Ingredients for the Salmon Quinoa Salad
1/2 can canned salmon, with the bones removed
1/4 cup chopped celery
2 tbsp fat-free mayonnaise
1 tbsp Italian salad dressing
1/2 cup cooked quinoa
1/4 cup chopped onion
1/4 cup chopped red pepper
In a small bowl combine the chopped veggies with the cooked quinoa, mayo, salmon and salad dressing.
