Salmon Quinoa Salad


Recipe of the day: Salmon Quinoa Salad

Quinoa has a lot of aminoacids and it`s cooked similar to rice.Quinoa is a grain grown in crops that has edible seeds and it is not a true cereal.

How to cook Quinoa

  • use hot water, soak for five minutes and remove its outer coating because it will have a bitter taste if not removed
  • stir the quinoa with your hand, and carefully pour off the rinsing water, using a fine mesh or something
  • transfer the quinoa to the cooking pot, add 1 1/2 cups water and 1/2 tsp salt if desired
  • bring to a boil and turn the heat down to let it simmer
  • cook the quinoa for 15 minutes
  • Ingredients for the Salmon Quinoa Salad

  • 1/2 can canned salmon, with the bones removed
  • 1/4 cup chopped celery
  • 2 tbsp fat-free mayonnaise
  • 1 tbsp Italian salad dressing
  • 1/2 cup cooked quinoa
  • 1/4 cup chopped onion
  • 1/4 cup chopped red pepper
  • In a small bowl combine the chopped veggies with the cooked quinoa, mayo, salmon and salad dressing.
