Recipe for today: Three Bean Salad
This is a low fat, high fiber, high protein salad that should easily maintain your muscles :).
Ingredients for Three Bean Salad
1 pound of green beans (you have to trim and cut the beans diagonally into 1-inch pieces)
1 tablespoon of extra-virgin olive oil
1 teaspoon of Dijon mustard
one 15 ounce can of cannellini beans, drained and rinsed
one 15-ounce can of kidney beans, drained and rinsed (beans are the key ingredient of the recipe if you didn`t get the Three Bean Salad idea :D. As i told you.. beans have proteins and proteins build muscles!)
1/4 cup with minced shallots
4 tablespoons of white wine vinegar
How to cook that delicious Three Bean Salad
Steam / cook the green beans in a pot of boiling water for 3-4 minutes, until they get tender-crisp. Drain and put the beans in some cold water to stop them cooking and retain colour for good looks then combine the cooked green beans with cannellini beans, kidney beans and shallots in a large bowl.
Whisk together the vinegar, oil and mustard and pour the mixture over the three bean future salad! You can serve the salad chilled or at room temperature.
